Πρόκειται για ένα single vineyard κρασί του οινοποιείου. Προέρχεται από ένα αμπελοτόπι, του οποίου η ηλικία ξεπερνά τα 150 έτη. Το κρασί, μετά τη ζύμωση, ωρομάζει με τις οινολάσπες του, μέσα σε δρύινη δεξαμενή, για 24 μήνες. Αρώματα από εσπεριδοειδή, λευκόσαρκα φρούτα, ζύμη, αγιόκλημα και έντονη ορυκτότητα. Πλούσιο σώμα, έντονη οξύτητα και κρεμώδης υφή, με πολύπλοκο αρωματικό background στόματος. Συνδυάζεται με οστρακοειδή, λιπαρά ψάρια, αυγά ψαριών και λευκά κρέατα ιδίως σε συνταγές με βότανα. Μπορεί να παλαιώσει για πάνω από 10 έτη.
